Anti-Inflammatory Turmeric Chicken Soup

🧾 Ingredients

  • 2 cups cooked shredded chicken
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup frozen peas
  • 4 cups chicken broth
  • 1 cup water

Healing Spices

  • 1 tsp turmeric
  • ½ tsp ginger (fresh or ground)
  • ½ tsp black pepper (helps activate turmeric)
  • ½ tsp thyme
  • Salt to taste

Optional Add-ins

  • ½ cup cooked rice or quinoa

👩‍🍳 Instructions

1️⃣ Sauté the Base

Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 4–5 minutes until softened. Stir in garlic.

3️⃣ Build the Soup

4️⃣ Simmer

Let cook for 10–15 minutes until vegetables are tender.

5️⃣ Add Chicken & Peas

Stir in shredded chicken and peas. Simmer for another 5 minutes.

6️⃣ Serve

Taste and adjust seasoning. Finish with fresh herbs and a squeeze of lemon.
