Chicken Bacon Gnocchi Soup

This Chicken Bacon Gnocchi Soup is pure comfort in a bowl—creamy, rich, and loaded with tender chicken, pillowy gnocchi, crispy bacon, and hearty vegetables. It’s the kind of meal that makes everyone go quiet at the table… because they’re too busy eating!


🧾 Ingredients

  • 2 cups cooked chicken, shredded (rotisserie works great)
  • 6 slices bacon, cooked and crumbled
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 celery stalks, chopped
  • 1 cup carrots, shredded or diced
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 package (16 oz) potato gnocchi
  • 1 cup fresh spinach
  • ½ tsp Italian seasoning
  • Salt and black pepper to taste

👩‍🍳 Instructions

1️⃣ Cook the Bacon

In a large pot, cook bacon until crispy. Remove and set aside, leaving a little bacon grease in the pot for flavor.

2️⃣ Sauté the Veggies

Add olive oil if needed. Toss in onion, celery, and carrots. Cook for 4–5 minutes until softened. Add garlic and cook 30 seconds.

3️⃣ Build the Soup

Pour in chicken broth and bring to a gentle simmer. Add Italian seasoning, salt, and pepper.

4️⃣ Add Gnocchi & Chicken

Stir in gnocchi and shredded chicken. Cook for 3–5 minutes until gnocchi are tender and float to the top.

5️⃣ Make It Creamy

Lower heat and stir in heavy cream. Simmer for 2–3 minutes.

6️⃣ Finish & Serve

Add spinach and stir until wilted. Top each bowl with crispy bacon and serve hot.
