Creamy Sausage & Potato Soup

“I swear this recipe was sent straight from heaven! These are THAT good! Not going back for seconds is pretty much impossible…”

This Creamy Sausage & Potato Soup is rich, cozy, and completely irresistible. With savory sausage, tender potatoes, and a velvety cream base, every spoonful is warm, comforting, and packed with flavor. It’s the kind of soup that disappears fast—so you might want to make extra!

🧾 Ingredients

  • 1 lb ground sausage (mild or spicy)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3–4 medium potatoes, peeled and diced
  • 1 cup heavy cream or half-and-half
  • ½ tsp Italian seasoning
  • ½ tsp paprika
  • Salt and black pepper to taste

Optional Add-ins

  • 1 cup shredded cheddar cheese
  • 1 cup spinach or kale
  • Crumbled bacon for topping

👩‍🍳 Instructions

1️⃣ Cook the Sausage

Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.

2️⃣ Sauté the Aromatics

Add diced onion and cook 3–4 minutes until soft. Stir in garlic and cook 30 seconds until fragrant.

3️⃣ Add Broth & Potatoes

Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.

4️⃣ Make It Creamy

Stir in heavy cream, Italian seasoning, and paprika. Simmer 3–5 minutes until the soup thickens slightly.
