  • 2–3 lb beef roast (topside, sirloin, or ribeye)
  • 1–2 tbsp olive oil
  • 1 tsp rosemary
  • 1 tsp thyme

1. Prep the Beef

  • Let beef sit at room temp for 30 minutes
