Hearty Stuffed Cabbage Soup

🧾 Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • ½ head green cabbage, chopped
  • 2 carrots, sliced
  • 1 can (14 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef broth
  • ½ cup uncooked rice
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste

1️⃣ Brown the Beef

Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Drain excess grease if needed.

Add onion and cook 3–4 minutes until softened. Stir in garlic and cook 30 seconds.

3️⃣ Add the Vegetables

Stir in cabbage and carrots. Cook for 4–5 minutes until slightly softened.

4️⃣ Build the Soup

Add diced tomatoes, tomato sauce, beef broth, paprika, Italian seasoning, salt, and pepper. Bring to a boil.

5️⃣ Add Rice

Reduce heat and stir in uncooked rice. Simmer for 20–25 minutes until rice and cabbage are tender.

6️⃣ Serve
