Zuppa Toscana Soup

This Zuppa Toscana Soup is a rich, creamy, and comforting Italian-inspired classic made famous by restaurants—but honestly, this homemade version is even better. With savory sausage, tender potatoes, fresh kale, and a creamy broth, it’s the perfect cozy soup that tastes like it simmered all day.

🧾 Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 4 slices bacon, chopped
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3–4 medium potatoes, diced
  • 1 cup heavy cream
  • 2 cups chopped kale
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper to taste

👩‍🍳 Instructions

1️⃣ Cook the Bacon & Sausage

In a large pot, cook bacon until crispy. Remove and set aside. In the same pot, cook sausage until browned. Drain excess grease if needed.

2️⃣ Sauté the Aromatics

Add onion and cook 3–4 minutes until softened. Stir in garlic and cook 30 seconds.

3️⃣ Add Broth & Potatoes

Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.

4️⃣ Make It Creamy

Stir in heavy cream and let simmer for 3–5 minutes.

5️⃣ Add Kale & Finish

Add chopped kale and cook until wilted. Stir bacon back in and season with salt, pepper, and red pepper flakes.

6️⃣ Serve

Ladle into bowls and enjoy hot with crusty bread.
