Health notes
- Chicken breast: Lean and protein-dense — cut evenly, the bites cook fast and stay juicy.
- Lemon zest and juice: Huge flavour for almost no carbs — no sweeteners anywhere near this dish.
- Garlic after the sear: Added late so it turns sweet and golden instead of bitter and burnt.
- Olive oil and a little butter: Oil for the sear, butter for the gloss.
- Locked from the cover: The photo supplied the title, claims, time and macros, so they are kept consistent throughout the block.
Key element — dry chicken, spaced batches, garlic last
Golden bites are made before the pan, at the chopping board: pat the cubes completely dry with paper towels, because surface water is what turns searing into steaming. Then fry in two batches with space between every piece. And hold the garlic back until the chicken is already golden — garlic in a ripping-hot pan from the start burns black and bitter before the chicken is even cooked. Sear, then garlic, then butter and lemon off the heat.
Ingredients
Bites
- 1½ lb boneless, skinless chicken breasts, cut in 1-inch cubes
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1 tsp salt
- ½ tsp black pepper
- 2 Tbsp olive oil
Garlic lemon finish
- 2 Tbsp butter
- 4 cloves garlic, minced
- Zest and juice of 1 lemon
- ½ tsp chilli flakes (optional)
- ¼ cup chopped fresh parsley
- Lemon wedges, to serve
Swaps
- Thighs: Boneless chicken thighs — richer and very forgiving.
- Air fryer: 400°F for 10–12 minutes, shaking once; toss in the warm garlic butter after.
- Parmesan crust: A tablespoon of grated Parmesan over the bites in the final minute.
- Herb change: Thyme or oregano instead of parsley.
Instructions
| 1 | Dry and season. Pat the chicken cubes completely dry with paper towels — this is the golden-crust step. Toss with the paprika, garlic powder, Italian seasoning, salt and pepper. |
| 2 | Sear, batch one. Heat the olive oil in a large skillet over medium-high heat until shimmering. Add half the chicken in a single layer with space between the pieces. Sear undisturbed for 3–4 minutes until deeply golden, then turn and cook 2 more minutes. Remove to a plate. |
| 3 | Sear, batch two. Repeat with the rest of the chicken, adding a drizzle more oil if the pan looks dry. Return all the chicken to the pan. |
| 4 | Garlic, now. Lower the heat to medium. Add the butter and garlic and toss for just 30–60 seconds until fragrant and pale gold — never brown. |
| 5 | Lemon off the heat. Take the pan off the heat. Add the lemon zest, juice and chilli flakes and toss until every bite is glossed. Lemon added on the boil turns dull; off the heat it stays bright. |
| 6 | Serve. Tip into a warm dish, scatter with parsley and serve straight away with lemon wedges, like the photo. |
Pro tips
- Even-sized cubes cook evenly — no raw middles next to dry edges.
- Do not move the chicken for the first 3 minutes; the crust needs stillness.
- If the pan juices look dark, wipe the pan between batches so batch two tastes fresh.
- Rest the bites for 2 minutes before serving so the juices settle back in.
- Brilliant cold, sliced over salads the next day.
